"What I noticed when I started adding more greens to my mornings was that everything seemed to slow down a little — in the best way. The noise got quieter. This juice became my reset button."
Cucumber and celery have always felt like water and light to me — refreshing in a way that I can feel almost immediately. Spinach blends so gently that you barely notice it's there, but your body does. Apple adds just enough sweetness to make it enjoyable without being heavy. The lemon cuts through everything and makes the whole glass feel alive. This is the juice I reach for when I want to feel like I've done something kind for myself.
Wash all produce thoroughly — especially the leafy greens and celery. I like to soak them briefly in cool water to remove any surface residue.
Juicer method: Feed through your juicer in this order — celery, cucumber, spinach, parsley, then apple, ginger, and lemon. The watery vegetables first help move the greens through more efficiently.
Blender method: Add all ingredients with 1 cup of water. Blend until completely smooth, 30–60 seconds. Pour through a nut milk bag or fine mesh strainer, pressing firmly to extract all the juice.
Taste and adjust. If it's too tart, add a little more apple or half a date. If it needs more brightness, squeeze in a little extra lemon.
Serve immediately — green juices are at their best fresh. Pour over ice if you prefer it chilled.
I make this one on days when I feel like my body is carrying more than it should — after a weekend of heavier eating, or when I'm feeling a bit sluggish. I drink it slowly, without my phone nearby, and try to just be present with it. I've discovered that the act of making it is part of the benefit. Taking ten minutes to prepare something nourishing is itself a form of care. You might find your own version of this feels just as meaningful.
