Turkey & Veggie Meatballs

These meatballs changed how I thought about ground turkey. What I noticed when I started adding grated vegetables is that they stay incredibly moist — something lean ground turkey can struggle with on its own.

"What I stopped doing was making plain meatballs. Adding grated vegetables completely transformed the texture and made them something everyone genuinely looks forward to. The zucchini is essentially invisible, but it's doing all the heavy lifting moisture-wise."

"You might find that making a double batch and freezing half is one of the most useful things you can do on a meal prep day. They freeze beautifully and go from freezer to dinner in 20 minutes."

🌿 Ingredients

  • 1 lb ground turkey (93% lean)
  • 1 medium zucchini, finely grated and excess water squeezed out
  • 1 medium carrot, finely grated
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 egg
  • ¼ cup breadcrumbs (whole wheat or gluten-free)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • Salt, pepper, and red pepper flakes to taste
  • Olive oil for cooking

✦ How I Prepare It

  1. Grate zucchini, then wrap in a clean towel and squeeze out as much water as possible — this step is important.
  2. Combine turkey, zucchini, carrot, onion, garlic, egg, breadcrumbs, and seasonings in a large bowl.
  3. Mix gently with your hands until just combined — overmixing makes tough meatballs.
  4. Roll into golf ball-sized portions (about 1.5 tablespoons each). You should get 20–24 meatballs.
  5. For baked version: arrange on an oiled baking sheet, bake at 400°F for 18–22 minutes, turning halfway.
  6. For pan version: cook in olive oil over medium heat, turning every 2–3 minutes until browned all over.

💛 Tips & Variations

✨ Variations & Adaptations

  • Asian-inspired — add ginger, soy sauce, and sesame oil; serve with rice
  • Mediterranean — add feta and sun-dried tomatoes; serve with yogurt dip
  • Spicy — increase red pepper flakes and add harissa for a North African flavor
