Carrot Egg Wrap

Simple, satisfying, and one of the most versatile things I make. This wrap works for breakfast, lunch, or a quick dinner when I need something nourishing without a lot of effort.

🌿 Plant-Forward ✦ Whole Ingredients 💛 Nourishing
🥚

"What I love about this wrap is that grating carrot directly into the eggs adds nutrition so effortlessly that no one notices it's there. I started doing this when I was trying to get more vegetables into my mornings."

"In my experience, the secret to beautiful scrambled eggs is cooking them low and slow. What I stopped doing was rushing — that's when they become rubbery. Give them time and they'll reward you with the softest texture."

🌿 Ingredients

  • 2 large tortillas
  • 3 large eggs
  • 1 large carrot, finely grated
  • 2 tablespoons milk
  • 1 tablespoon butter or olive oil
  • ¼ cup fresh spinach
  • 2 tablespoons cream cheese or plain Greek yogurt
  • Salt, pepper, and smoked paprika to taste
  • Fresh chives or green onions, chopped

✦ How I Prepare It

  1. Whisk eggs with milk, grated carrot, salt, pepper, and a pinch of smoked paprika.
  2. Heat butter in a pan over medium-low heat. Add the egg mixture.
  3. Cook gently, stirring occasionally, until eggs are just set — soft and tender.
  4. Warm the tortillas in a separate pan or microwave.
  5. Spread cream cheese on each tortilla, then spoon the scrambled eggs down the center.
  6. Top with fresh spinach and chopped chives. Roll and serve warm.
