Carrot Beet Wrap

The color of this wrap alone makes me happy. What I noticed when I started eating more beets and carrots together is how grounded and energized I felt — something about root vegetables just feels deeply nourishing.

🌿 Plant-Forward ✦ Whole Ingredients 💛 Nourishing
🥕

"I started making this wrap after a period when I was exploring more plant-forward meals. What I discovered is that roasted beets have a sweetness that pairs unexpectedly well with the earthiness of hummus and the tang of balsamic."

"You might find that this becomes one of those meals you actually look forward to. I love how visually beautiful it is — that deep crimson color against the white cheese feels like food that's been made with intention."

🌿 Ingredients

  • 2 large wraps (whole wheat or beet-infused if available)
  • 1 medium beet, roasted and thinly sliced
  • 2 medium carrots, julienned or shredded
  • ½ cup hummus
  • ¼ cup arugula or mixed greens
  • 2 tablespoons crumbled goat cheese or feta
  • 1 tablespoon balsamic glaze
  • 2 tablespoons pumpkin seeds
  • Fresh dill or parsley

✦ How I Prepare It

  1. Roast the beet ahead of time: wrap in foil, bake at 400°F for 45–60 minutes until tender. Cool and slice.
  2. Spread a generous layer of hummus across each warm tortilla.
  3. Layer beet slices and shredded carrots over the hummus.
  4. Add arugula and crumbled cheese.
  5. Drizzle with balsamic glaze and sprinkle with pumpkin seeds.
  6. Add fresh herbs, roll firmly, and slice.
