🧁

Ingredients

For 12 muffins servings

•
3 very ripe bananas, mashed
•
1½ cups rolled oats
•
1 cup whole wheat flour (or oat flour for gluten-free)
•
2 eggs
•
3 tbsp honey or maple syrup
•
¼ cup coconut oil or butter, melted
•
1 tsp vanilla extract
•
1 tsp cinnamon
•
½ tsp turmeric (the golden touch)
•
1 tsp baking soda
•
Pinch sea salt
•
Optional mix-ins: walnuts, dark chocolate chips, raisins

How I Make It

1

Preheat oven to 350°F (175°C)

Line a 12-cup muffin tin with paper liners or grease lightly with coconut oil.

2

Mash the bananas

In a large bowl, mash bananas well — the riper they are, the sweeter and more flavorful your muffins.

3

Mix wet ingredients

Whisk eggs, honey, melted coconut oil, and vanilla into the mashed bananas.

4

Add dry ingredients

Stir in oats, flour, cinnamon, turmeric, baking soda, and salt until just combined. Fold in any mix-ins.

5

Fill and bake

Divide batter evenly among the 12 cups (about ¾ full). Bake 18–22 minutes, until a toothpick inserted in the center comes out clean.

6

Cool before eating

Let muffins cool in the pan for 5 minutes, then transfer to a wire rack. They firm up beautifully as they cool.

Lee's Notes

  • → The riper and more spotted your bananas, the sweeter and more moist the muffins.
  • → I freeze bananas specifically for this recipe — thaw overnight and they're perfect.
  • → Turmeric gives these a subtle warmth and a gorgeous golden interior without changing the flavor dramatically.
  • → Store in an airtight container for up to 4 days, or freeze individually for easy grab-and-go mornings.
